Super Bowl Tostados... Fast easy and delicious

INGREDIENts for Tostados                      Ingredients for Cottage Guac:

40oz Sun Vista Pinto Beans

4 Tablespoons of vegetable oil

1lb. of Chorizo

2 Jalapeños

1 Lettuce

1 Cabbage

1 8oz sour cream

1 lb. of Cotija cheese (sharp Mexican cheese)

25 Tostado shells

4 key lines (one for every avocado)

4 avocados de-pitted and mashed

16oz of cottage cheese

1 tablespoon of salt

½ cup of cilantro diced

1 Jalapeño diced

¼ of onion diced

 

DIRECTIONS:

For tostados in a medium sized pot place oil and heat until starts smoking (this cooks the oil and gives it a goodflavor). Then take off heat and let cool for a few minutes then add the chorizo. Cook chorizo on medium low heat for about 10 minutes. Then lower the heat to simmer and add the beans (make sure to drain the water from the can first).  Mix well and mash beans until beans look a bit red. Then the beans are ready to serve.

For cottage guacamole, de-pit avocados and mash them in a bowl. Then place juice of the limes, cottage cheese, cilantro, onion, salt and diced fresh jalapeños then mix thoroughly.

Place shells on plate add the beans, sour cream, cheese, lettuce, cabbage, guacamole and fresh jalapeños. Enjoy!
